Long ago when I was a pre-teen I went to Wichita with my grandparents. While we were there we stopped to eat at a restaurant called Spaghetti Jacks. I don’t think this franchise or business even exist anymore, but we thought it was a delicious Italian restaurant. One of us ordered rigatoni and we liked it so much my grandmother decided to figure out what was in it so that we could make it at home.
Well tonight Mike and I had it for dinner and it was delicious. Every time we have it for dinner it makes me think of being a little pre-teen in Wichita with my grandparents. Brings back great memories and then it reminds me of everyone that I have taught to make it.
start off with chopping up all the vegetables and parsley.
Onions, green bell pepper, mushrooms, and then throw them all into a pan to brown.
Make sure you put the noodles in the boiling water while you are working on the sauce.
The sauce also needs pepperonis and sausage. We like blue & gold sausage the best. (http://blueandgoldsausageco.com/) It even comes from Oklahoma so we know that it has to be delicious.
Then put everything together in the pan, let simmer for a little while. At least until the pasta is done.
Pasta on the plate, sauce on top of the pasta, and then sprinkle some cheese, we like to use Romana, but Mozzarella is good too. Then enjoy!
